Avocado Tomatillo Salsa Verde
The first time I had a variation of this avocado tomatillo salsa verde was at work. The chef in our lounge makes something like this a few times a week to go with omelettes and breakfast tacos. I usually eat a simple morning snack of oatmeal and either scrambled egg whites or hardboiled eggs. Sounds kind of boring right? Maybe, but adding a tablespoon of this magic green sauce transforms my boring eggs to an exciting and flavorful breakfast.
Seriously, whenever he makes it, the giant bowl is usually scraped clean by 9:00. I’ve even saved a few spoonfuls to top my salad or chicken breast for lunch. I may have even eaten it by itself with a spoon because it’s so good.

Fresh and healthy ingredients
I crave it all the time and I’m so disappointed on the days he doesn’t make it. Finally, I decided to start experimenting and recreate it myself at home. And I think I’ve finally got the perfect avocado tomatillo salsa recipe.
Fast & Easy Appetizer
I tested it out at our weekly neighborhood Sunday dinner and my friends gobbled it up and agreed. The best part is it couldn’t be easier to make. Literally, throw all the ingredients in a blender and blend until smooth. That’s it! 5 minutes max!

With that kind of prep time, this salsa will definitely become a go-to appetizer for any gathering. And with Cinco de Mayo coming up, it’s the perfect festive Mexican-inspired dip. And don’t hesitate to double the recipe. This avocado tomatillo salsa verde stays fresh and green in the fridge for up to 3 days so you can add it to your breakfast or salad for lunch for the rest of the week. That is, if you have any leftovers!
