With Christmas right around the corner and my Christmas shopping officially done (hallelujah!!), I was in the mood for some celebratory holiday baking today. But I wasn’t in the mood to eat half the sugar cookie dough (I like to think of it as quality control), make a huge mess with icing, and end up with a big sugar-overload tummyache ūüôĀ

Healthy and Delicious Gingerbread flavored cookies made with Vital Proteins Collagen Creamer for a boost of protein and healthy fats

A healthier and gluten-free version of a traditional Christmas favorite! These Healthy Gluten-Free Gingerbread Cookies are made with Vital Proteins Gingerbread Collagen Creamer for a little boost of protein and that classic gingerbread flavor with a healthy twist. 

Ingredients

Instructions

  1. Preheat the oven to 350F degrees
  2. Meanwhile combine the dry ingredients with a mixer until thoroughly combined (may need to use a sifter if the flours or creamer contain chunks)
  3. Add the coconut oil, maple syrup, vanilla extract, and eggs until the mixture forms a dough
  4. Form dough into small disks on baking sheet lined with parchment paper (I used a medium cookie scoop then flattened the balls)
  5. Bake for 8 -10 minutes (do not overcook or they'll be dry!)
  6. Remove from oven and allow to cool
